Sensory: Perfect option for a single-origin citric espresso. A selection of yellow varietals and processed them in two different ways: as naturals and pulped. Varietals with yellow cherries usually produce sweeter beans because the yellow reflects more sunlight than red cherries – this reflection makes yellow cherries cooler, slowing down the maturation process: a slower maturation means that the beans have better conditions and more time to develop sugars. The combination of mixed processing with the varietal choice made this velvety coffee that tastes like ripe yellow fruits (especially peach) and milk chocolate, along with honey-like sweetness.
