You’ll find a mouth-watering display of pastries, salads, soups, sandwiches. If you come too late, you might miss out on our famous homemade breakfast biscuit with local sausage, egg and cheese.

Made From Scratch

We start baking and making for our customers in the wee hours of the morning. If you pass by on the way to the train, you will be sure to catch a delicious whiff of our made-from-scratch blueberry muffins, our daily scones, or our award winning brownies. Take note, if you order an espresso drink with added flavor it is most likely a concoction made by our kitchen wizards who hand make our chocolate sauce and syrups. They create flavors such as caramel, gingerbread, pumpkin spice, vanilla, cardamom, lemon lavender, and many others.

Kitchen Manager and Head Baker

A local through and through, Dylan grew up in Lyme and now calls Old Saybrook home. He’s been part of the Ashlawn family since 2017, although he has had a passion for baking fo well over a decade. Dylan got his start here as our morning baker, learning the ropes from the legendary Sarah Boone—the woman behind many of our most iconic recipes! Dylan is the ultimate team player; his encouraging leadership style brings out the best in our bakers, and his steady, positive attitude resonates throughout the cafe environment.

Alyssa Pardo

Baker/Shift Lead

Since mid-2023, Alyssa is an industrious worker and a creative force at Ashlawn. She brings her skills as a visual artist into the bakery, offering the perfect combination of quiet practical leadership and artistic talent.
